Deb Criddle, from Trull, claimed one gold and two silver medals in the freestyle dressage and individual event at the London 2012 Paralympic Games.
First Class stamps with her picture on have gone on sale in 500 post offices across the UK today and will soon be available at a further 4,700 branches.
Ms Criddle told the BBC that she was at the "top of her career".
"It tops all the other Games. I don't think anyone could have envisaged it," she said.
"The people involved, the supporters we've had - they've really made it something very special."
